How Ice Cream Is Made and Stored

Ice cream is one of the world's oldest foods. According to legend, Marco Polo first brought it back from the Far East to Europe. A century later, Catherine de Medici introduced it to France when she married King Henry II. Yet the history of ice cream actually dates back much further than that. Its earliest forms are not at all like those of modern-day ice cream. King Solomon was known to enjoy iced drinks during the harvest season. Alexander the Great was also fond of icy drinks flavored with honey and wine.

Commercial ice cream is made by a process called "freezing." During the freezing process, a liquid mixture is mixed with dry ingredients such as sugar, stabilizers, dried eggs, and milk. The mix is then homogenized and pasteurized, and finely chopped solids are added. The resulting mixture is then placed in a storage container and allowed to solidify. Soft-service ice cream is typically served directly from the freezing machine.

Liquid nitrogen is often used in ice cream manufacturing to produce a super-smooth texture. But this process is not used by all ice cream manufacturers. In fact, some shops use nitrogen gas instead of liquid nitrogen to produce ice cream. It's possible that the ice cream you buy in a supermarket may have accidentally been made with nitrogen gas, which would have made the product softer and less stable.

There are also a variety of flavors of ice cream. Some people enjoy mixing different flavors in one dessert, forming a sundae. Unlike ice cream in a cone, a sundae combines ice cream, sauce, and fruit or other items. A sundae can also include a brownie or a cake.

After ice cream is made, it must be stored properly in the freezer. Once in the freezer, it must remain at a temperature of -or lower. Otherwise, it can become soft and form large lumps. It is also important to keep the container tightly closed when storing it in the freezer. This prevents odors from penetrating the ice cream and affecting its flavor.
